12 Dec 2018 Christmas pop-up brunch by Eggsellent and Pastry Bitches

Eggsellent is a new project founded by Polina Yurova and Sveta Mikhaleva, who are known for their breakfast sets, where all the ingredients revolve around an egg. There is a base composed of lettuce, toast, and cream cheese, where chefs add eggs cooked in one of four styles and toppings up to a guest’s taste. Armed with the conviction that breakfast is the most important meal and should therefore be the most enjoyable time of the day, Eggsellent triumphantly conquers the city, preparing unusual pop-up breakfasts in cozy restaurants and cafes every weekend.

For brunch in coffeemania Eggsellent came up with brand new culinary ideas:

Christmas toast
with turkey, creamy sauce, lingonberry spiced jam, and fried egg.

Warm salad with poached egg
Brussels sprouts, sweet potatoes, celery root, corn, dried cranberries, curried cashew sauce.

Bagel
with crispy chicken, bacon, fried egg, and Caesar sauce.

Orange and rosemary salmon
New Year bowl with cauliflower puree, avocado, salmon, poached egg, and baby spinach.

Cocotte eggs
with crispy breadsticks and Parmesan cheese.

Dessert
ginger pancakes with tangerine jam.

Since we cannot imagine brunch without delicious croissants, the choice of the second character in our first pop-up story was obvious. The Pastry Bitches project is famous for wonderful croissants with funky fillings. The pastry chef studied this skill at the gastronomic school of the Michelin-starred Hofmann restaurant in Barcelona, and then in New York at the Daniel Boulud restaurant in Manhattan. The idea of the project is simple and wonderful — to have the opportunity to eat exactly the same croissant back at home, that everyone dreams about after a trip to France or Spain. The unique creamy butter, prepared especially in the South of Russia, and fermentation equipment brought from Spain, allow achieving a bright creamy taste and the right texture of Pastry Bitches’ croissants. The team put all the creativity into each filling recipe and decoration style trying to surprise the guests. And they do it great!
